Description
Nabat or Rock candy (also known as sugar candy or rock sugar or crystal candy) is a type of confection composed of relatively large sugar crystals. Originating from Persia (where its called Nabat ) they are often colored with various natural colors and infused with fruity or flowery essences. These ones in particular are infused with saffron which gives it its unique color flavor and aroma.
Rock candy is often dissolved in tea. It is an important part of the tea culture of many places where a lump of rock sugar is placed at the bottom of the cup.
It is a common ingredient in Chinese cooking. In China it is used to sweeten chrysanthemum tea as well as Cantonese dessert soups and the liquor baijiu. Rock candy is also regarded as having medicinal properties it is used as a part of traditional Chinese and Ayurvedic medicine.
We highly recommend plain black teas or those infused with cardamom.
